Ami Tanaka
Master / Pastry Chef
Studied under confectioner Takashi Uchikawa. Gained experience at famous patisseries like "Anniversary" in Omotesando, then moved to the U.S. in 2002.
After earning multiple diplomas from the Wilton School in Chicago, I was involved in launching bakeries and pastry shops, product development, and technical instruction in various locations across the U.S. such as Los Angeles, Atlanta, and Silicon Valley.
After returning to Japan in 2008, she founded the sweets design studio "Sweets Kanal" in 2011.
In addition to creating custom sweets for magazines, commercials, and events, we have also obtained certifications as a nutritionist, food hygiene manager, and have a business license for confectionery manufacturing, allowing us to spread the appeal of sweets across a wide range of fields.
